Pokemon Pink was likely canceled back in the '90s, but not many people know about what could have been the companion game to Pokemon Yellow. Since the release of the first Pokemon games, the titles have always been color-coordinated to match one of the main Pokemon found within the game.

What is the pink Pokémon called?

Known as the Balloon Pokémon, Jigglypuff is shaped like a round ball with pink skin, large blue or green eyes, pointy ears, and a tuft of fur on its forehead.

Why are some Pokémon pink?

Lore-wise, they are based off the Pinkan Island episode (along with the Valencia pokemon). They aren't particularly rare, just a naturally-spawning alternate model of some pokemon you can use if you like. Only certain pokemon can be pink. I also see pink pokémon more than shinys but that just my experience.
