Jaggery is made by evaporating the water from sugar cane juice or palm sap. It is sold as a block, liquid or granules.
How jaggery is produced?
Jaggery making is a simple process comprising crushing of sugarcane for juice extraction, filtration and boiling of juice for concentration and then cooling and solidifying to give jaggery blocks. The juice is extracted in conventional crusher; this is then filtered and boiled in shallow iron pans.
How is jaggery different from sugar?
Unlike sugar, which has a granular texture, jaggery is generally formed into a semisolid mass. According to 2020 research, jaggery is usually golden yellow in color and has a sweet, winy fragrance and a taste similar to brown sugar or molasses. Good quality jaggery contains around 70% sucrose.
