Bulrushes can be used to make flour, syrup, or sugar and prepared in a raw salad or as a cooked vegetable. Flour can be made from the pollen, ground seeds, and dried rhizomes (131).

What can you use bulrushes for?

The leaves can be used for construction of shelters or for woven seats and backs of chairs. They can be woven into baskets, hats, mats, and beds. The dried seed heads attached to their stalks can be dipped into melted animal fat or oil and used as torches.

Young shoots can be eaten raw or used as an asparagus substitute. The base of more mature stems can be eaten raw or cooked (but remove the outer covering). The seeds are edible and, when roasted, are said to have a pleasant, nutty flavour.
