That means you are expected to do something without anybody mentioning it. For example: Tomorrow is your father's birthday.

Do they sound a bit rude to use to old people? That depends on what your whole sentence is and what you're trying to express. Neither is innately rude, but could be rude for example if you said "It goes without saying that you can't do that" after the person already did it. ...
