Unlike the most common form of salt, table salt, pickling salt does not contain any anti-caking agents, iodine, or other additives. This makes it better for pickling, as additives can negatively affect the appearance or color of pickled food.

Can I substitute sea salt for pickling salt?

Sea Salt. Although sea salt contains no additives, it is not recommended as a substitute for pickling salt because it is so dramatically different in grain size and shape from pickling salt, causing it to measure out very differently by volume than pickling salt.
