As soon as cherries are picked from the trees, they are brought to a packing facility where they are immediately cooled using chilled water – a process called hydro cooling. They are then sorted by size and color and packed into boxes for shipping to markets around the world.

How do you process wild cherries?

Chop your sour cherries in a blender or food processor for 15-30 seconds. Pour in a large pot and add sugar and pectin. Bring to a boil, stirring constantly for 3-5 minutes, or until the colour of the cherries changes. Skim the foam off the cherries.
