Endive is widely consumed all over Europe and in some American states. Although this green leafy vegetable contains high concentrations of bitter glycosides and inulin, no known side effects so far notified when used in moderate quantities.
What does endive contain?
Endive is rich in several micronutrients including potassium, calcium, magnesium, folate, vitamin A, and vitamin K. It also provides several B vitamins and some vitamin C.
Is endive good for your health?
Just one-half cup (25 grams) of raw endive leaves packs 72% of the DV for vitamin K, 11% of the DV for vitamin A and 9% of the DV for folate (33). It’s also a source of kaempferol, an antioxidant that has been shown to reduce inflammation and inhibit the growth of cancer cells in test-tube studies ( 34 , 35 ).
