Are Junket tablets the same as rennet?
Junket. Junket is just a very weak form of rennet, traditionally used to set custards. It is possible to set milk with junket, but it should only really be used for soft cheeses because it just isn't strong enough to set a firm curd. Vegetable Rennet Tablets are about five times stronger than Junket tablets.
Are Junket tablets vegetarian?
Note: this recipe is vegetarian and gluten-free; Junket tablets' rennet is vegetarian. Combine the milk, sugar, and vanilla in a saucepan. Heat on low until the mixture comes to lukewarm (110 degrees). While the mixture heats, dissolve the junket tablet in the water.
