Too low of fermentation temperature < 50F will lead to inactivity of yeast and bacteria and can be a risk factor for mold growth. Freezing your SCOBY if not done with a quick freeze method (which can inactivate the SCOBY for later activation) can break the matrix when thawed and the SCOBY will be deactivated.
What temperature will kill a SCOBY?
Kombucha thrives between 72-85 degrees. Temperatures in the 90's will eventually kill the SCOBY. Temperatures in the 60's will put it to sleep.
Can cold water kill a SCOBY?
An environment that's too cool can inhibit fermentation, while one that's too warm can harm the scoby.
