Either variety of shortbread cookie will keep very well. Homemade cookies will be good to eat for up to a month, sealed in an airtight container, and safe to eat (albeit somewhat stale) for much longer than that. Walkers boxes are labeled with a "Best By" date that's up to a year from the date of purchase.
Can you eat out of date shortbread?
Yet don't be so hasty when it comes to throwing them away, biscuits should be perfectly fine to eat after their best before date. Biscuits won't go mouldy but they will go soft, just pop them in the oven for a few minutes to get them crunchy again.
How long can you keep shortbread?
Bake the shortbread in the oven until very lightly coloured; allow about 20 minutes for biscuits, 30–35 minutes for a shortbread round. Dredge with sugar and place on a wire rack to cool. Shortbread will keep for up to 4 weeks in an airtight tin.
