The thing is that Evenly Matched is not a continuous card so even though it is banished or in the GY when resolving it will resolve, as you did not negate it's activation.

How do you stop evenly matching?

Perhaps the best hard counter to Evenly Matched is Artifact Lancea. Duringyour opponent's turn, you can tribute it from your hand or your side of thefield to stop any banishing effects for the entire turn.

Does evenly matched destroy?

When your opponent activates "Evenly Matched", you perform the resolution of "make your opponent banish cards from their field face-down". This resolution is not affected by the effect "Cannot be destroyed, or banished, by card effects" of "Metaphys Executor".
