Sweet potatoes can be harvested about 3 1/2 – 4 months after planting. If the harvesting is made too early or too late, only a few crops are harvested and the quality is not good.

Sweet potatoes are usually ready to harvest just as the ends of the vines begin to turn yellow, or just before frost in the North. To avoid injuring tubers, find the primary crown of the plant you want to dig, and then use a digging fork to loosen an 18-inch wide circle around the plant.

How long does Camote take to grow?

Sweet potatoes mature in 90 to 170 days and they're extremely frost sensitive. Plant in full sun three to four weeks after the last frost when the soil has warmed. Make holes 6 inches deep and 12 inches apart.
