Pectin is available in most large supermarkets to be used as an additive in jam and jelly making. The beauty of using a liquid or powdered pectin is that you will be able to get a good, consistent set on almost any jam or jelly.

What is liquid pectin used for?

Pectin is an indigestible soluble fiber which, when combined with water, forms a colloidal system and gels. It has a wide range of uses. It can be found as a gelling, thickening or stabilizing additive in food, an ingredient in laxatives, a demulcent in throat lozenges, and vegetable glue for cigars.

Do I have to use liquid pectin?

For stovetop methods, liquid pectin is always added to the boiling mixture near the end of the cooking process while powdered pectin is stirred into the raw fruit at the beginning. In the case of cooking on the stovetop, the decision to use liquid or powdered is up to you (although you should always follow the recipe).
